2 ½ - 3 lbs chicken (cut into small chunks)
1 tsp salt
½ tsp black pepper
1 tsp stevia
5-6 TBSp coconut oil
½ cup Bare Foods Asian Ginger Dressing & Marinade
4 tsp stevia
2 TBSP rice vinegar
4 TBSP water
½ tsp red pepper flakes
2 TBSP sesame oil
3 green onions ( diced)
2 tsp fresh squeezed orange juice
Heat the oil in large skillet over medium heat and add chicken pieces. Depending on size of skillet it may take two batches to cook.
While the chicken is cooking . Mix all the sauce ingredients except the green onions in a saucepan and bring to a simmer. You can add xanthan gum for more thickness if desired.
Serve over cauliflower rice. Spread the cauliflower rice on plates and divide the chicken among them. Drizzle sauce on the top and garnish with the green onions and toasted sesame seeds.
